Kitchen cleaver/chef's knife

A cleaver for all kitchen cutting tasks, this knife is somewhere between a chef's knife and a Chinese style cleaver. It has a tall blade, a comfortable handle, and an edge with a nice rocker. You can chop, slice and mince for days without fatigue.

Forged from a high carbon steel truck suspension spring (check out my care and maintenance page to learn more about non-stainless steel knife care) and handled with Desert Ironwood (fun fact: Desert Ironwood is so dense its specific gravity is over 1.00!, that means it sinks in water. Pretty neat. Also, very beautiful and wear resistant).
